TOM Kerridge has declared war on pizza chains and brasseries as he revealed details of his new low-cost, all-day dining venture at a Marlow pub.

The double-Michelin starred chef has leaked details of his second restaurant at the Coach and Horses on West Street, while addressing invited guests before last week’s National Restaurant Awards.

Tom and his wife Beth plan to transform the 19th century town pub an open plan tapas-style bar, with the kitchen brought forward so diners can see the chefs at work.

And with a breakfast, lunch and dinner menu featuring British and French-inspired small plates, the star chef hopes to lure customers out of High Street eateries and back to the pub.

As reported on industry site Big Hospitality, he told audiences at last week’s Estrella Damm Gastronomy Congress in London: "It will be a new concept for a pub that will be open for breakfast, lunch and dinner.

"We are embracing solid, classic food, flavours and cooking. One of which is using a rotisserie oven, of which I am a huge fan.

"Our plan with this new business is to attack the brasseries, pizza chains and coffee shops, to try and draw them back into the pub."

After becoming the first chef to win two coveted Michelin stars for pub food at the Hand and Flowers, the nearby Coach and Horses will mark the award-winning couple's second foray into the Marlow food scene.

The Hand and Flowers was awarded the Best UK Gastropub gong at last week's National Restaurant Awards, but lost its crown as the best UK restaurant overall to London Indian restaurant Gymkhana.

Tom said the new venture, which is still under negotiation, would be led by Nick Beardshaw, senior sous chef at the Hand and Flowers.

A planned 25 to 30 dish menu would serve plates such as crispy pigs head and spiced cod with cumin, priced at £6 to £12 each.

The bar interior, styled on a tapas restaurant, would see an L-shaped bar with 20 stools and a further 20 covers around the edges of the main pub building.

The Kerridges have applied to Wycombe District Council for planning permission to overhaul the grade II listed pub to include a rear extension and a new kitchen.

A decision on the application is due this month, with Marlow Town Council offering no objections to the plans.

Pub owners Enterprise Inns confirmed a sale has been agreed subject to the deal being finalised.
