TEN-year-old Ethan Cole will be packing his own lunchbox from now on after he created an award-winning sandwich.

The Bourne End youngster was a regional winner in a national competition to create a ‘dream sandwich’. The Fun Lunch competition attracted more than 5,500 entries.

His creation, which contained roast chicken, shavings of parmesan, sun-dried tomato paste and salad, will now be featured in the Kingsmill Fun Lunch Recipe Book.

Ethan, who goes to St Paul’s CofE School in Wooburn Green, said: "It's all my favourite ingredients, and I thought it would be nice to put them together in a sandwich."

Children under 16, from across the UK, were encouraged to enter their dream sandwich idea during the Easter holidays.

Judges marked entries according to their creativity, ease of preparation, clarity of recipe, overall appearance and ‘health vs indulgence’. Nicky Gillett, who was on the judging panel, said: "We were so impressed by the very high standard of entries that we received, some were truly spectacular and Ethan’s is an example of one of the very best that we received."
