TOM Kerridge’s new Marlow eatery is aimed at everyone – not just the wealthy few – according to the chef who will take the helm at the all-day diner.

Nicholas Beardshaw, Tom’s senior sous chef at The Hand & Flowers, will soon be head chef at The Coach when it opens its doors in the former Coach and Horses pub on West Street next month.

And while its twice Michelin starred neighbour has a booking list stretching way off into the future, he said the new, lower-cost venture will offer walk-in meals to the average man on the street.

He told industry website Staff Canteen: “We’re going with the way food has evolved over the last 15 years or so. The catchment is much wider. A couple of years ago, people who ate in the top restaurants were the middle classes. Now it’s everybody.

“So we’re just moving with that, making it appealing to everybody in all walks of life so everyone can get the same standard of the food that we all love.

“We always describe it as the kind of place we’d want to go on our days off. Somewhere you can go to have some lovely food and nice beer in a relaxed environment.”

Among the changes to the 19th century inn is a new kitchen, which will take centre stage so diners can see their meals being cooked – and served up – by chefs.

Adding to the informal atmosphere, small screens showing football will be peppered through the bar and small plates will arrive at different times when they are ready.

And Nicholas praised his boss Tom’s leadership and vision, saying the celebrity chef is likely to be front and centre as the new staff team gets the Coach off the ground from late November.

He said: You get really well looked after, it’s great fun and it’s really exciting because there’s so much going on and we’re constantly growing. It’s a really good place to be and he’s a great person to work for.

"The businesses will operate independently but they are very much linked. The staff will be separate but I’m sure Tom will be there a lot, particularly while we’re getting started.”
