A long-empty restaurant at Bourne End Marina has undergone a huge revamp and is set to become a new Spanish eatery opening this month.

Corazón del Rîo - meaning 'heart of the river' - will have a soft opening on May 25, with an official launch on June 1.

The restaurant used to be occupied by Coopers Riverlight but has been largely empty, except for some successful pop-ups, for a while now.

The new authentic Spanish restaurant is being opened up by Katrina Turnbull, who previously ran successful tapas restaurant Tres Corazones in Wendover, where she is from.

Ahead of its opening, the building has been given a stylish makeover, drawing inspiration from the sparkling River Thames it overlooks.

The restaurant also boasts a covered terrace with breathtaking views of the river and the countryside beyond it.

The tapas preview menu features dishes like Ensalada de Pulpo y Berenjenas (octopus and baked aubergine with mojo rojo salsa), Tataki de Atún (seared tuna with wasabi), Pinchos Morunos (marinated Iberico pork skewers with honey yoghurt and couscous) and Carrilleras de Buey (ox cheeks with honey ali-oli and chestnut puree).

The drinks menu features special cocktails, wines, gin, tequila, rum, beers and ciders and soft drinks.

Katrina said: "It has been so exciting to see my vision for Corazón del Río come to life and the restaurant’s gorgeous new interior really does reflect the beautiful riverside location.

The landlord is Sorbon Estates. Managing director Tamra Booth said: "It was important to us to find the right tenant for this location and Katrina stood out from the very beginning with her experience and passion.

"The fit-out she has designed and installed is impressive, she has taken great care to select the right chefs to produce authentic dishes, and our extension of the external decking and state-of-the-art canopy will allow al-fresco dining, whatever the weather.
