Gerry Knowlden is landlord at the Cherry Tree in Flackwell Heath.

You have been here two years. What have you changed about the pub?
We had a total refit, with new oak wooden floors, dark beams, and we have brightened the place up a bit. There are six pubs in the village, and we felt with that there was room for someone to be a bit different.

What kind of customers do you get?
We have developed a very good clientele. Women feel very comfortable coming in. The atmosphere is a bit different to how it was. We have put lights in the carpark, so women can walk away in safety. But we do get a complete mix, from 18 to 70 year- olds.

Why have you made the place successful?
It's all about quality and details. We have very well trained and loyal staff. We use branded glasses, focus on cleanliness, and quality of product. My wife puts women's products body spray and nice soaps in the toilets. And there are glitter toilet seats which is a talking point.

The nice touches make this different from other places. Drinks are expensive. So we believe, for the money that customers spend, we should give them quality. We are obviously doing something right business is good and we have been nominated for awards two years in a row.

What is your most popular dish?
The nachos are very popular, and we are known for our proper chilli, which is really hot, and very good. And there are the one slice toasties, which customers really enjoy.

What about the wine?
We have excellent house wines, which are our most popular. It shows the quality of the higher priced wines. If you set your standards by stocking good house wines, people know that they will get a good wine selection.
